Lean and tender, a classic roasting joint from local pedigree beef.

Oven-roast on a bed of chunky root vegetables or simmer slowly with wine and herbs for a succulent pot roast. Cut from the hindquarters, boned, rolled and tied by hand for easy carving and beautiful presentation at the table…and the ultimate roast beef sandwich the next day. 

Dry aged and fully matured for 28 days.
